World Food Market goes crazy for Caribbean

Organised by Caribbean Food Emporium, the one day conference will take place on Wednesday 29th November and will deliver thousands of pounds worth of free educational content as it discusses issues as diverse as Caribbean culinary skills, new food and drink products, contract catering to environmental awareness investment opportunities.

After a welcome address from Phillip Allen, director of Entrepreneur's Academy, Ron Shillingford, editor of Caribbean Times Newspaper, will give an overview of the Caribbean food and drink industry, a market currently worth £800 million and growing by 5% a year.

Keynote speaker Floella Benjamin OBE, highly regarded in the industry as championing Caribbean cuisine, will be looking at the future of the market and opportunities for growth. Earlier this year, Floella launched her own range of Caribbean cuisine in which she recreated her favourite recipes such as curry chicken with rice and peas roti, and curry and escovitch fish. Her next step is to offer children's meals, soups, fruit drinks and fruit cake.

Caribbean chef of the year 2005 Collin Brown will take the audience on a voyage of discovery as he showcases new cooking methods for a range of renowned dishes via video link. Currently contracted to Glistening Waters in Brentford, his dishes range from traditional to modern and although Caribbean food is popular, he believes it is yet to be fully incorporated in to mainstream menus.

The conference will culminate in the unveiling of the prestigious Caribbean Food and Drink Awards, where the best the industry has to offer will be rewarded and recognised, including best Caribbean take-away, best Caribbean Bakery, best Caribbean chef, best Caribbean caterer and best Caribbean supplier.
