Cornmeal

Ingredients
- 1
medium onion
- 2
tbs olive oil
- 3
stalks spring onion
- 1
tomato, chopped
- 2
slices hot pepper, chopped
- 6
okras, chopped
- 1/2
cup shredded raw saltfish
- 5
cups coconut milk, or water
- black
pepper
- 2
cups cornmeal

Preparation
- Saute
the onion and spring onions in the oil.
- Stir
in the tomatoes, hot pepper, okras and salt cod.
- Stir
for a few minutes then pour in the coconut milk, or water.
- Let
it come to boil, add the black pepper, then gradually add
the cornmeal, stirring it all the time.
- The
cornmeal will swell considerably. When well mixed
in, turn the heat to very low, cover the pan and cook
for a further 15-20 minutes.
- Place
in oiled bowls and roll around until smooth to turn out on
the serving plate.
- Serve
with seasoned saltfish or stew fish, or stewed liver.
