Potato Pudding

kg sweet potatoes
- 1
medium cho cho ( or cooking apple)
- 1
litre coconut milk or milk
- 1/2
cup raisins
- 1
teaspoon vanilla essence
- 1/2
tsp nutmeg
- sugar
- Topping
- 1
cup coconut milk
- 1/2
cup sugar
- raisins

Preparation

Peel
and grate the sweet potatoes and cho cho, mix in
the milk, raisins, essence, nutmeg and sugar to
taste. The mixture should be runny rather
than thick.

Pour
it into a buttered baking pan and bake at 180°C
or gas mark 4, for 1 hour, or until the top becomes
solid.

Take
a fork and scrape the top, and add the topping ingredients
mixed together. Bake for a further 30
minutes .
