Orlando travels the world spreading the news about Caribbean
Food and Drink. Food
is his passion, and
sex on a plate is his favourite phrase.
When in England, Orlando
operates the Nouvelle Caribbean Company,
which caters for top business functions.
He is still consultant chef to the exclusive Ladera Hotel
in St. Lucia.
A wonderful asset of Ladera is its award-winning, two-story
Dasheene Restaurant. It has open walls and a fantastic view. We
made friends with the chef, Orlando
Satchell, who is famous for combining local fresh produce,
meats, and fish with creative flavorful cooking and attractive
presentation. We had several excellent dinners there, choosing
mostly from the daily specials. I was astonished by the extensive
selection of excellent international wines, which were paired
expertly with the dinners.

Virginia Burke
|
|
Virginia Burke was born and educated in Jamaica, studied
graphic design in California and studio arts in New York City.
She has travelled extensively and has lived in London, New York
and Hawaii.
On her return to Jamaica, she became involved with the Walkerswood
company and their mission to provide a rural community with employment
opportunities. In
her role as Managing Director of Walkerswood Marketing she has
been able to pursue many of her passions, including travel, design,
public relations and community involvement.
This has also enabled her to take the fabulous food of
her region to the global market.
As a director of the Bamboula restaurant in London, she is
able to indulge her love of entertaining and sharing the Caribbean
food experience.

Neil Hill
Grace, Kennedy (UK)
Market Manager

|
Neil has been associated with Caribbean Food for 15 years.
He has been working with Grace, Kennedy Ltd in his present
capacity for 4 years.
In the past he also
worked with Enco for a period of four and a half years.
He travels to the Caribbean at least twice yearly and works
closely with Grace, Kennedy
HQ in Jamaica.
Neil did consultancy for a period of time.
He was actively helping Caribbean businesses
to import goods or
to export. This
was funded by the EU.
He is a man of many experiences and is still available
for discussions about the issues.

Sandra Duhaney
Walkers Wood
Food Technologist

Sandra
Duhaney studied food science at the University of Florida in the
early
80s.
On
return to Jamaica, she has worked for several food companies,
including Cee Foods Ltd and Coffee Industries Ltd, before joining
Walkerswood Caribbean
Foods in 2001.
Her
passion is to develop new Caribbean products for the market place.

Dawn Grant

The
Director of Caribbean Food Emporium-
Dawn Grant first became
involved commercially with Caribbean food in 1995.
She was a partner in a Caribbean Restaurant/Take away establishment
in East London for a number of years, but is now
an Entrepreneur in different fields including Consultancy,
Training, Writing and Publishing.
She
has declared this one of her missions in life -
to promote Caribbean Food. She feels its time
to stop hiding this great cuisine.
