KORÁ - Red Snapper

Ingredients
5 lb red snapper, pollock, cod or halibut
2 medium onions, chopped
1 ½ cup chopped green pepper
1 cup chopped celery
1 bunch spring onions, chopped
2 tablespoon of butter
12 oz tomatoes
6 oz tomato paste
2 cloves garlic, minced
2 bay leaves, crumbled
1 teaspoon of salt
¼ teaspoon pepper
1 heaped teaspoon oregano
- Cajun seasoning to taste
1½ cup dry white wine

Method
- -
Preheat the oven to 350°F / 180°C.
- -
Lightly brush a broiler pan with cooking oil.
- Place
fillets on greased pan and bake in a 350°F / 180°C
oven for 20 minutes.
- Saute
onion, spring onions, green pepper, garlic, crumbled
bay leaves and celery in butter.
- Add
tomatoes, tomato paste and the rest of the seasonings
except the wine; simmer for about 20 minutes.
- Add
wine to sauce, pour over fillets -let it spill around
the sides of the fish- and return to oven for an additional
10 minutes until fish flakes easily.
