Peanut Brittle

Ingredients  
175g roasted peanuts (not salted)
500g sugar
125 ml water
2 tbs butter
1/2 teaspoon cream of tartar
1/4 teaspoon bicarbonate of soda
Preparation Method
  1. Combine the sugar, water and  cream of tartar in a heavy saucepan.
  2. Boil the mixture until it is fully caramalised, clear and sticky.   
  3. Remove it from the heat and quickly add the soda, salt, butter and peanuts.   
  4. Pour the mixture into a greased flat container.
  5. Cut into pieces while it is still warm.
