Ingredients
1 Kg green Papaya
2 tablespoon of butter
2 tablespoon of peanut oil
1 chopped onion
1 chopped tomato
2 sprigs of celery, chopped
2 cloves garlic, chopped
1 meat stock tablet
1 teaspoon cumin
1 teaspoon nutmeg
1 tablespoon Indonesian "Ketjap Manis" sweet

3 large potatoes, small cubes
1 tablespoon tomato paste
- salt and pepper if needed

Method

Peal the Papaya, cut in half clean the inside and dice
in small cubes.
- Heat the oil and butter in a large pan.
- Sauté onions, tomatoes, celery, garlic with
the 1 meat stock tablet in the pan.
- Add nutmeg, cumin, "Ketjap Manis" and a
bit of water. Mix well with a wooden spoon.
- Add Papaya, potatoes and tomato paste. Mix well and
let simmer until the potatoes are well cooked.
- Add salt and pepper to taste.

Ketjap manis
Also spelled kecap manis. Similar to dark soy sauce
but sweeter, this extremely rich, dark, syrupy sauce
is used in marinades, as a condiment or as an ingredient
in Indonesian cooking. The sweetness comes from palm
sugar; other flavorings include garlic and star anise.
It's available from Asian supermarkets.
