Ladera Resort's Executive Chef to Debut at James Beard House in NYC February 6, 2003 with a special dinner for dignatories.
 
Soufrière, St. Lucia, West Indies -  The New York City debut of Chef Orlando Satchell, Executive Chef at Ladera Resort's Dasheene restaurant, marks
an historic first for the Caribbean island of St. Lucia.  Chef Satchell is
the first St. Lucian chef to be invited to cook at the prestigious James
Beard House in Manhattan.
 
The dinner will take place on Thursday, February 6, 2003, for which
Chef
Satchell has created a special five-course menu, based on native island
produce and Caribbean seafood. It will feature many of Dasheene's
signature dishes, such as 
Callaloo Tarts, 
Soufrière Jangas Salad, 
Island Creole Fish,
Cappuccino of St. Lucian Rainbow Soup 
and a grand finale of 
Coconut and Banana Brulee for dessert. 
 
Each dish will be paired with international
wines, selected by Gourmet magazine wine consultant Michael Green and
donated
by Paterno Wines International.    
St. Lucia Distillers Ltd. will
sponsor the award-winning aged rums.
 
Chef Satchell is known around the globe for his innovative style and
award-winning Caribbean cooking.  He has brought the taste of the Caribbean to restaurants as far flung as Florida and Singapore. On the island of
St. Lucia, he has been at the forefront of a movement to encourage local
chefs to use their native produce and products.  During his off time from Ladera
Resort, Chef Satchell manages Nouvelle Caribbean, a catering concept
based in London.  Born to Jamaican parents in Birmingham, England, Chef Satchell
has brought Caribbean cuisine into many top London hotels, including the
Park Lane, the London Hilton and the Landmark Hotel.  In 1998, he became the
first Caribbean chef invited to cook at the Cordon Bleu School in London.
 
Dasheene is a destination restaurant, known throughout the Caribbean
for its innovative kitchen, turning out creative renderings of island cuisine
in a spectacular, mountaintop setting.  Located on-property at Ladera
Resort, the open-air restaurant has earned recognition from international press for
its cooking, as well as for the panoramic view of the volcanic Piton
Mountains, the rainforest and the Caribbean Sea. 
 
The James Beard Foundation is a non-profit membership organization which
celebrates the industry's finest culinary artists and offers members
the opportunity to savor the creations of the best chefs from around the
globe. 
 
An invitation to cook at the Beard House is considered a top honor in a
chef's career. 
 
Ladera Resort is located in the Windward Islands of the Caribbean. It
is uniquely situated in the mountains above the port town of Soufrière.
