Take note of Orlando Satchell.   Top Caribbean Chef, who works internationally.   Ten years ago,  he wrote in his business plan, that he wants to enable Caribbean Food to become world renowned.   He travels internationally doing just that.   His emphasis is not just taste but presentation.  His favourite saying follows.

"Make food look like Sex on a Plate".

As Senior Chef and Consultant for the Ladera Resort Hotel in St. Lucia,  its restaurant Dasheene has become Orlando's signature.  He regularly devises new menus, and trains chefs.   The restaurant  is  a haunt for the celebrities such as Bill Gates, and Micheal Winner.      If you want to reserve a room at the Ladera book well in advance.   If you are in St. Lucia,  try booking for lunch or dinner.   Be prepared for a spectacular view because it is high up in the hills overlooking the sea.

Orlando has travels around the world promoting Nouvelle Caribbean Food.   The idea is not to plonk the food on a plate, and think the taste is enough to sell it.   Making an artwork of food is a major strength in marketing food.   His travels have included going as far a field as Moscow and Singapore.  In fact he has travelled to Singapore 5 times to train chefs who were keen to learn how to cook Caribbean Food.    There is now at least one Caribbean restaurant in Singapore - Coco Carib.

Congratulations  are in order, for Orlando  has been chosen to demonstrate at the James Beard Event in New York next February, 2003.    He is the first Caribbean Chef with such an honour.    Of course he is extremely pleased about this, so don't forget to big him up when you seen him next.
