Langoustine scented with smoked paprika and vanilla served with Ackee capuccino, Salt cod roullette, Squid ink and herb coulis

Jerk Red Snapper &  Lobster served with a black truffle & sweet potato confit, pomegranate and sorrel chutney and passion fruit coulis, with a balsamic reduction.

Crispy feuilles of brick filled with exotic fruit and tamarind and rasberry coulis, sprinkled with bitter cocoa shavings.

(Slices of pork fillet, in a strong spicy jerk sauce, served on cushion of sweet potato mash)
