Jerk Chicken

 

Ingredients    

2   pounds  chicken pieces

1 tablespoon of jerk seasoning rubbed in well.

  (Alternative if you have no jerk seasoning:
1      tablespoon     Good Seasons Italian Salad Dressing Mix
  2      tablespoons   brown sugar
   2      tablespoons   oil
   2      tablespoons   soy sauce
   1      teaspoon      ground cinnamon
   1      teaspoon      ground thyme
     1/2  teaspoon      ground cayenne pepper
   1/2  teaspoon      ground black pepper
   1 large Onion, peeled and chopped
      5    Garlic cloves,  peeled and
           -chopped
    1/4 teaspoon Scotch Bonnet pepper )

 

Preparation Method
  1. Wash and prepare chicken.
  2. Mix all ingredients except chicken in small bowl until well blended.
  3. Pour dressing over chicken; cover.  Refrigerate 1 hour to marinate, or overnight.  
  4. Drain and discard dressing mixture.  
  5. Place on greased grill over hot coals or on rack of grill pan 5-7 inches from heat.  
  6. Grill  40-45 minutes or until cooked through, turning
    frequently.  (Or bake in on gas mark 5 for 1 hour) 

Makes 6 servings.

Prep Time:  10 minutes plus marinating.  

Grilling   time:  45 minutes.

Baking time: 1 hour
