Preparation Method
- Put the water in a large pot and bring to boil, then reduce to
a medium heat.
- Chop the quavas coasely, and place in the pot.
Steam until tender.
- Drain off excess water (can be used for a guave
drink), then press the guavas through a sieve to get a smooth
pulp.
- For each cup of pulp, add 1 cup of
sugar. Place the pulp and sugar into a thick
bottomed pot. Boil over a medium heat, stirring
constantly, until the mixture thickens, and leaves the sides of
the pot.
- Pour into a damp shallow container, and when it
is nearly cold, and has set, cut into squares. If it
has not set when cold, then pour it all back into the saucepan
and continue to cook until it thickens some more.
- Coat each piece with sugar.
- The guava cheese can be stored for a long time.
