Gingerbread

Ingredients
125 ml molasses
250g sugar
125g butter
125 ml hot water
300 g flour
2 tsp baking powder
1/2 tsp salt
1 tsp nutmeg
2 tsp grated fresh ginger
1 egg beaten
Preparation
  1. Heat the molasses, sugar and butter gently in a pan.
  2. Pour in the hot water, mix well, and set aside.
  3. Sift together the flour, baking powder, salt and nutmeg, then add the grated ginger and the well beaten egg.
  4. Combine the molasses liquid for the flour mixture, and pour the resulting batter into a shallow tin lined with greased paper.
  5. Bake in a slow oven at 150°C of Gas mark 2 for 1 hour, or until done.
