Ingredients
- 2
litres water
- 1
kg fish heads, or bony fish
- 6
green bananas, peeled and cut into small pieces
- 1
tomato, chopped
- 1
sprig thyme
- 2
stalks spring onion
- 1
whole scotch bonnet pepper
- salt
- black
pepper

Preparation
Method
- Place
the water and fish into a large pot, and bring to boil, then
cover the pot and reduce the heat to medium.
- Put
in the fish, and cook for 30 minutes. Then strain
the stock.
- Remove
all the flesh from the bones of the fish, and return this
to the stock.
- Add
the bananas, tomato, thyme, spring onion, and the whole scotch
bonnet pepper.
- Bring
to boil again, then simmer until the bananas are tender.
- If
the soup is too thick, add some more water. Add
salt and pepper to taste.
- Remove
the whole pepper, and serve the broth very hot.
