Fish Tea

 

Ingredients  

2 litres water
1 kg fish heads, or bony fish
6 green bananas, peeled and cut into small pieces
1 tomato, chopped
1 sprig thyme
2 stalks spring onion
1 whole scotch bonnet pepper
salt
black pepper

 

Preparation Method
  1. Place the water and fish into a large pot, and bring to boil, then cover the pot and reduce the heat to medium.
  2. Put in the fish, and cook for 30 minutes.   Then strain the stock.
  3. Remove all the flesh from the bones of the fish, and return this to the stock.
  4. Add the bananas, tomato, thyme, spring onion, and the whole scotch bonnet pepper.
  5. Bring to boil again, then simmer until the bananas are tender.
  6. If the soup is too thick, add some more water.   Add salt and pepper to taste.
  7. Remove the whole pepper, and serve the broth very hot.
