Curry
Goat (or mutton, lamb, beef)

Ingredients

goat meat

1/2 cup
onions -- sliced
1 stalk
spring onion
2 cloves
garlic -- finely chopped
1 tablespoon
salt
1 tablespoon
black pepper
2 1/2 tablespoons curry powder
1
hot peppers -- fin
2 tablespoons
oil
1 teaspoon
lime juice
6 cups
boiling water
1/2 cup
coconut milk
2 ounces
butter
1 teaspoon
sugar
1 sprig
thyme

Preparation
Method
- Wash
goat meat and cut in pieces, sprinkle with salt and pepper.
- Add
curry, spring onion, onion, garlic and hot pepper. Work
these into the meat.
- Cover,
let stand for 1 1/2 hours.
- Heat
the oil. Add meat and seasonings, sprinkle lime juice
over. Fry lightly for five minutes, stirring.
- Add
4 cups boiling water, and simmer, covered, 1 1/2 - 2 hours
or until meat is tender, stirring from time to time.
Add
water as needed.
- Add
coconut milk, margarine, sugar and thyme. Cook for five
minutes more.

Suggestion:
Serve
accompanied by plain white rice, roti or rice and peas.
