I am really interested in the versatility of Caribbean food. I
had never realised how close
yet different it is to Indian, for example your
"All Purpose" spice
is essential. I really do think there would be a
fantastic response if more
people were made aware of the variety within
Caribbean food. I only
knew of Jerk Chicken ( which we have begun to make at
home quite often!).
