Cassava Pone

Ingredients  
500 grams grated cassava
250 grams grated coconut
1 cup brown sugar
4 tbs butter
125 ml evaporated milk
1/4 tsp ground nutmeg
1 tsp cinnamon
Pinch of fresh ground ginger
1 tsp vanilla extract
1/4 cup raisins, finely chopped

Pone can also be made with a combination of pumpkin and sweet potato or cornmeal.

 Preparation Method
  1. Preheat oven to 250 deg F or 280 deg C
  2. Put all ingredients in a large bowl and mix well.
  3. Put the mixture into a greased rectangular 8-inch baking dish and bake in oven until golden brown and firm.
