Beef Soup

 
Ingredients (make sure you have a big giant pot)
3 carrots diced
1 cho cho
1 lb pumpkin
2 turnips, diced
1 1b potatoes
10 - 12 cups water
1 1b shin of beef, chopped
3 cups flour for dumplings
1/2 1b yam
1/2 1b coco or green breadfruit
1 clove garlic
2 stalks springs onions
1 sprig thyme
3 slices hot pepper
black pepper
12 pimento berries

 

Preparation

  1. Cut the carrots, cho cho, pumpkin and turnips into small pieces and put them to boil in water with the shin of beef.

  2. After boiling for 5 minutes, turn the heat down to a moderate temperature and cook for 1 - 2 hours, until the meat is tender.   Add more water if the liquid is reduced too much.

  3. For the  dumplings, mix  the flour and water and a pinch of salt to form a stiff dough.  Roll into smooth small balls or spindles as big as a little finger, and place in the soup mixture.

  4. All the peeled yam, potatoes and coco.  Crush the garlic and spring onions and add to the pot with the thyme and hot pepper.   Sprinkle black pepper and salt.   Add the pimento berries.   

  5. The soup is ready when the yam and potatoes are cooked.
