Hello
from Caribbean Food Emporium.

- It
had to be cornmeal porridge for me this morning. Nothing
else will do.
I hear that Take Aways such as Scandals in Harlesden have
queues of people for their Caribbean porridges.
Gwaan man!

- Yesterday,
it was Ackee and Prawns for dinner,
served with chips and salad.
Absolutely lovely!
Just sauté a little onion, garlic and tomato,
add coconut cream, seasoning, and add the prawns and ackee.
The meal took a total of 20 minutes.
The chips took the longest (oven chips).

- Some
people think that ackee and saltfish are twins,
but not so. You
can serve one without the other.
I’ve also heard it said that there is a shortage of ackee.
Who said that? I have no problem getting it from my local Tesco,
at £1.79 per tin. Admittedly the Walkers Wood tin is half the size it used to be (in the olden days) but that’s
the ideal size for me.
If your local Tesco,
or Sainsbury is not selling it.
Ask them why, and specially request it. We need to get these supermarkets serving us, and not
the other way round.

The Association,
Caribbean Cuisine Consortion (CCC),
was
introduced to the wider industry at
the Caribbean Cuisine Seminar on
the 1st
June 2003 held at the Savoy Hotel.
We are now taking members.
If you are keen to support the work of raising the profile
of Caribbean food, and educating the nation then,
do join. Details
are on the website, and you can join online,
or print the form, complete and post with annual membership
fee of £40.

for CCC, to be distributed
freely. The
first is a brochure – introduction to CCC, and a
summary introduction
to Caribbean Food and Drink.
The second is a directory of the Caribbean Food and Drink
Industry. These
should appear later in the year.

educating the masses,
and supporting
its members.
