Ackee Soup

Ingredients  

  1   can        Ackees (19oz) 
 1 1/2   cup   Chicken stock, 
 1/2   cup      Tomatoes -- peeled, chopped
 1/4   cup       Shallots -- chopped
                     Salt -- to taste
                     Pepper, black -- to taste
                     Tabasco hot sauce -- to taste
 1/2   cup       Heavy cream

 

Preparation Method
  1. Put the ackees together with the liquid from the can into a saucepan with the chicken stock, tomatoes, shallots, salt and pepper to taste.   Bring to boil.
  2. Cover and simmer gently until the shallots are tender. 
  3. Cool, then puree in an electric blender. 
  4. Return to saucepan, season to taste with hot pepper sauce, stir in cream and heat through.
  5. Garnish with chopped chives or chopped parsley or with sweet paprika.
